Being made of Culatello meat, the most lean cut of the pork`s leg (Culatello means `little backside`), it is considered as one of the finest salami. Salami Culatello La Fattoria di Parma, according to the traditional recipe, is produced using the residual meat of the Culatello Ham. Fattoria di Parma Salame Culatello is a salami approximately 30 cm long with a diameter of about 3 cm and characterized by a quite soft meat.
